At least one employee must be a Certified Food Protection Manager (CFPM). In counties with a population of 4 million or more, a CFPM or a trained food manager may be required to be on-site at all times.

Recertification Requirements

Recertification requires a minimum of 6 hours of instruction on food safety topics, which may include traditional or alternative training methods, such as distance education. In addition, there must be at least 1 hour dedicated to the Certified Food Manager examination.

Notes:

In Harris County, Dallas, Houston, and San Antonio, food establishments are required to have a Certified Food Protection Manager (CFPM) on-site at all times.
